How to Make the Perfect Green Chile Chicken Bake

Today we are going to talk about how to make the perfect green chile chicken bake. There are days when I wake up with the inspiration to cook and create and make all the yummy things in the kitchen. Then, there are days when my family is lucky if I heat up dinosaur chicken nuggets in the air fryer and serve them with a side of applesauce. Life it all about balance.

Today’s recipe falls somewhere in between these two extremes. It’s super easy to make and basically involves throwing ingredients in a bowl and mixing them together. But, when it comes out of the oven you will have that wonderful feeling of accomplishment. Yes, the laundry may be piling up, and the floors might need a good mopping, and maybe there are multiple stacks of random papers all over your house that just never seem to get smaller. Is that just me? Why are there always so many papers??? But….you made dinner! A really yummy dinner that your family will love. A dinner that heats up beautifully for leftovers….so guess what? You made lunch for tomorrow too!

You are basically the queen of domesticity! So wear your crown with pride, give yourself a pat on the back, and enjoy a big ol’ serving of this yummy green chili chicken bake.

Green Chile Chicken Bake Recipe Adjustments

This recipe calls for 2 1/2 cups of chicken. You can grab a rotisserie chicken or boil a few chicken breasts to make this happen. I love to meal prep a bunch of chicken for various recipes using my Instant Pot. This is the one I use. We have had it for 3 years and love it! This would be a perfect way to use up leftovers from my Chicken & Gravy recipe. Whatever is easiest for you.

If your family isn’t a fan of sour cream, you can leave it out and double up on the enchilada sauce. I have done it this way and it’s just as delicious. If you have read some of my other posts, you know that I am not a fan of beans. When I say not a fan, I mean you will never ever see a recipe on here that includes them. That being said, I shared this recipe with a friend and she told me that she added a layer of beans before adding the cheese. It was apparently delicious. So, if beans are your thing, give it a try!

Green Chile Chicken Bake

This green chilie chicken bake recipe is the perfect weeknight meal. Chicken, cheese and vegetables come together with a green chile sauce to make a delicious meal.

Ingredients
  

  • 2 1/2 cups Cooked Chicken shredded
  • 12 oz Can Green Enchilada Sauce
  • 4 oz Can Chopped green Chilies
  • 12 oz Can Whole Kernel Corn
  • 1 cup Sour Cream
  • 2 cups Cooked Rice
  • 8 oz Shredded Cheddar and/or Monterey Jack Cheese
  • 1 tsp Each, Garlic Powder, Onion Powder, and Cumin

Instructions
 

  • Preheat oven to 375
  • Combine enchilada sauce, green chilies, and sour cream together in a bowl.
  • Add in seasonings, rice, corn and chicken and stir to combine.
  • Pour mixture into a 9 X 13 baking dish and top with shredded cheese
  • Cover with foil and bake for 30 minutes.
  • Remove foil and bake for an extra 5-10 minutes if you want to brown the cheese a little more.

Notes

Serve with a side salad or roasted vegetables. Top with sour cream, salsa or tortilla chips. Replace sour cream with an extra can of green enchilada sauce for a less creamy dish.
